Cachaca Ypioca, is the result of 4 generations of distilleries of the Telles family since 1846, when Dario Telles De Menezes became the owner of the distillery. Cachaca Ypioca, is the largest producer of Cachaca in Brazil, producing a traditional and excellent quality Cachaca.
Tasting Characteristics
Bright amber colour, with aromas of smoked bread, butter, oak and white pepper. The taste of green apple becomes intense in the mouth, while the flavours of black pepper, smoked bread are enhanced, and some notes of clove are involved. The finish has notes of clove, black pepper and green apple.
The process
Its high quality is ensured by the careful selection and sorting of sugar canes, as well as the use of only 5 of the available varieties, which are carefully ground for 36 hours. This stage is catalytic since after this process, it is fermented for the purpose of the first development of alcoholic degrees, to lead to the distillation, a necessary condition for the formation of Cachaca. After distillation, Cachaca Ypioca ages in about 20 different types of casks, to develop and improve at the same time, the aromatic and flavour characteristics of Cachaca. Finally, the Blending process is a crucial point before bottling, to ensure the consistency of the taste profile of Cachaca Ypioca.
