Τasting Characteristics

Deep ruby colour with purple tints. Complex aromatic character reminiscent of black cherries and raspberry combined with chocolate notes. A fresh red wine with velvet taste, very good structure and balance with a long aromatic aftertaste.

Vineyard

The vineyards of the area are located on the sunny southeastern slopes of Vermio, sheltered from the cold north winds. Abundant rainfall and relatively cool climate play a beneficial role in plant growth and fruiting. The soils are clayey, calcareous ideal for the production of wines with a rich body.

Vinification – Maturation

Separate vinification of each grape variety with a small percentage of cold maceration to obtain desired aromatic intensity. Alcoholic fermentation takes place in stainless steel tanks at ideal temperature (22 - 27°C) in order to maintain varietal aromatic character and produce desirable secondary aromas. Malolactic fermentation takes place next to produce softer wines. Blending takes place after the wines have aged a bit to produce a well structured and balanced fresh wine.

Perfectly complements chicken and pork dishes, cooked perfectly grilled. Combines well with cheese dishes and sausages as well as heavy soups (especially legumes).
