Tasting Characteristics

Process

The Saint James Rum is fermented from pure sugarcane juice. During fermentation, which lasts 24 to 36 hours, all the sugar is converted into alcohol and then distilled. This produces cane rum with 75% vol alcohol content, which is then allowed to rest for half a year in stainless steel tanks. During this maturing period, the carbon dioxide and flavours produced during the distillation can escape. In this way the rum gradually acquires its harmonious, pleasant aroma and taste. It is then stored in oak barrels for at least 2 years.
