Tasting Characteristics

On the nose it is soft, with aromas of oak, tobacco, caramel, ripe forest fruits and hints of spices to follow. In the mouth it is rich and round, with all its characteristics harmonizing with the barrel.

The Process

Distillation from the varieties Assyrtiko, Sauvignon Blanc, Kountoura, Mouhtaro and Malagouzia. The core of each variety is distilled separately in a copper still, drop by drop and at a low temperature. In this way, only the noblest aromatic compounds are obtained. The heads and tails of the distillate are discarded, leaving only the heart, which is re-distilled, following the same slow and gentle process. Finally, the separate spirits are mixed in different proportions. The goal is to create a tsipouro with a balanced taste and stable quality. It has been aged in french oak barrels of 225 liters, some new and some used twice or thrice, to keep the elements of the grape.

Best Served

It is consumed at 12 - 15°C, that is not too cold, so as not to lose its aromatic elements.
