The Process

The always fresh anise, after the harvest by hand, is put in bags and immersed in the sea to be salted in a natural way and to give the special taste and the characteristic aroma to the ouzo Matarelli. The uniqueness of Ouzo Matarelli is highlighted by the organic anise, which is its main ingredient and honey. Anise, the fruit of an annual plant, has found the ideal growing conditions in the volcanic soils of the estates of Charalambos Matarellis, in Lisvori, Lesvos. Honey is another of the secrets of the taste of Ouzo Matarellis. Charalambos Matarellis uses the award-winning Mytilene honey in competitions.
