An excellent quality ouzo which comes from 100% distillation. Exuberant nose, full body and with a long finish.

The Process

100% distillation. Strictly selected ingredients such as Lisvorian anise, barley, treated water from the area of Gera, alcohol of agricultural origin (molasses), Chios mastic, onions, salt for 9.5 hours are simmered in copper litters of 1000 liters of discontinuous operation. Only 2/3 of the production is received (1/3 is discarded). Then the "heart" of the distillate, about 69o, is diluted with pure treated water and pure pure honey is added, which we procure from the beekeeping cooperative of Lesvos, instead of sugar.
