Tasting Characteristics

It has a deep brown colour with reddish reflections. On the nose it has aromas of bitter orange, nutmeg, cinnamon and sweet currant. In the mouth it has a rich sweet taste with exotic spices - nutmeg, vanilla, clove and balanced with a crunchy character.

The process

Rum contains local spices and fruits including cinnamon, cloves, nutmeg, vanilla, coconut, lemon and orange. Richeria Grandis - known locally as "Bois Bande" - a bark known in the Caribbean as a powerful aphrodisiac has also been added to give rum an extra flavour. These spices and fruits are added to the rum as it is distilled into a copper and continuous still and then aged in Kentucky Bourbon barrels to give a complex and balanced spice rum.
