Dalmore is a distillery, that sets the highest standards in the production of its whisky. It is located in the Alness region of the Highlands, north of Inverness. The story of Dalmore goes back to 1263, when Colin of Kintail rescued King Alexander III from an attacking deer. His Mackenzie tribe was honorably given the emblem of the royal deer. In 1867 the descendants of the tribe acquired the distillery and used the royal deer as its mark. Dalmore pays special attention to the barrels used in whisky maturation, which come from the best wineries in the world. This results in the production of whisky with a rich and complex character.

Τasting Characteristics

Νose with citrus fruit, chocolate and spices. Mouth of orange, dried fruit and vanilla. Aftertaste of roasted coffee and dark chocolate.

The Process

Matured for an initial nine years in American white oak ex-bourbon casks, the spirit is then divided. One half remains in the bourbon barrels, while the other is transferred to exclusive 30 year old Oloroso sherry butts, before being reunited to create the final product.

Served

Adding a bit of filtered water or spring water often helps whiskies to "open up" or "bloom" and The Dalmore is no exception. The water tones down the aggressive sweetness and helps cut some of the alcohol burn, though the latter is still present and accounted for.
