Vineyard

The vineyard is located in Thira and extends to 13,000 acres of rare indigenous varieties, is unique in the world and is a world heritage site. The climate in Santorini is intensely dry with rare and heavy rains, especially in winter. The average rainfall is 349.7 mm. Volcanic soil and climate do not favor the development of diseases in plants and vines. The yield per acre does not exceed 400 kg per acre.

Vinification – Maturation

Extensively ripened grapes, sun-dried for fifteen days, then controlled fermentation.
