Tasting Characteristics

A light gray color in appearance with almost ten years of aging of the wine, which gives it a wonderful richness of aromas and memories. Dried plums, tobacco, soy, cigar box, salty notes of pasturma create a nose that changes, evolves and surprises. Aging has given the wine a velvety texture, while the accentuated acidity still keeps it lively and full of nerve. Nebbio's moderate alcohol, beautifully ripe tannins and moderate volume give the wine balance and flexibility.

Vineyard

The vineyards of the Techni Oinou estate in the Mikrochori of Drama overlook Mount Pangaeo, a mountain that in ancient times was associated with Dionysian worship and Orphic teachings.

Vinification - Aging

Pre-fermentation cryo-extraction of a few days to transfer noble phenols and structure from the grape to the must, before the "appearance" of the alcohol. Fermentation takes place in stainless steel tanks with regular recycling to extract color and tannins. After malolactic conversion, the wine is transferred to old, neutral French oak barrels of 225 liters where it remains for 4.5 years. Light filtering and bottling.

Tasty Combinations

It will go well with dishes such as a juicy beef wellington wrapped in crispy pastry, a wild boar fillet, a mushroom risotto with grated parmesan, but also a burger stuffed with blue cheese cream.
