Vineyard

Platanos 5-10% slope at prehistoric Theopetra Cave foothills at 230m/755ft altitude.

Vinification – Maturation

Prefermentative maceration for 4 hours and free-run juice partial draining (saignee method). Fermentation in stainless steel tank at low temperatures. Aging on lees for 40 days.

Harmony

Paired with seafood, dishes with tomato sauce and charcuterie.
