Vinification – Maturation

Gentle extraction and clarification of the must followed by slow fermentation at low temperatures. In order to maintain the produced CO2 tank valves are closed before the end of the fermentation. Instant chilling terminates the procedure when the balance between the grape sugars and the alcohol is right. The wine rests on its lees for about three weeks.

Harmony

It pairs well with fruits salads and creamy desserts.
