Vineyard The average age of the vines is 40 years. Soil typical of Burgundy, rich in clay and limestone.

Vinification & Maturation

100% Barrel fermentation (30% new oak barrels / 70% barrels aged 1 and up to 5 years). Maturing on fine lees for 12 months in barrel and 4 months in tank. Ageing potential up to 15 years.

Harmony

It is the ideal accompaniment for benedict eggs, fillet with bearnaise sauce, risotto with yellow pumpkin. Alternatively next to a ripe cheddar cheese.
