Τasting Characteristics

The wine has medium body with a rich fatty texture, refreshing acidity and notes of flint, iodine and salt around a core from fresh citrus fruits and orchard fruits.

Vinification & Maturation

Classic white vinification. Devitrification, staying with it Bark of the corms (pre-fermentation extraction) for 6 hours in temperature 5-6 °C. Light spirit pressure and fermentation at 16-17°C. Remaining in stainless tanks in contact with the lees for 10 months.
