Vinification – Maturation

Produced by long pre-fermentation cold extraction and fermentation with native yeasts at low temperatures. Knead and mature in oak barrels on the Oinolaspes. It is the way of vinification that the late Haridimos Hatzidakis had chosen to use for the production of this particular wine.

About two months before bottling it has a characteristic deep yellow color and exuberant personality that proves that the fight for balance is extremely charming. You can age it in bottles for at least three years before enjoying it. Can be aged for more than 10 years Harmony Shellfish dishes, white and red meats, game as well as mature full fat cheese.
