Τasting Characteristics

Ruby-red, with a purple sheen. In both aromatics and flavour, it preserves the fruity varietal character of Pinot Noir, coupled with earthy notes, spice and rose. It demonstrates an outstanding structure and a crisp acidity, which makes it very enjoyable with food.

Vineyard

Yiniets, Metsovo, 940m elevation.

Vinification – Maturation

Destemming, crushing and maceration until after completion of the -day-long fermentation, for 22 days. The cap was punched down twice per day during fermentation. Fermentation temperature ranged between 15–25°C; immediately after maceration, the wine was transferred to 300-litre French oak barrels (Nevers, light toast), where it sat on its lees for two months. It was then given 22 months ageing in cask.
