Τasting Characteristics

Clear red colour and a strikingly aromatic bouquet redolent with notes of freshly ground black pepper. Satisfying acidity and soft, round tannins that melt on the palate. Light, balanced, with a delightful peppery aftertaste.

Vineyard

Low-yield vineyards in the Ioannina region, with high levels of rainfall and snowfall in winter.

Vinification – Maturation

Destemming, crushing and maceration until after completion of the -day-long fermentation, for 22 days. The cap was punched down twice per day during fermentation. Fermentation temperature ranged between 15 - 25°C immediately after maceration, the wine was transferred to 300 litre French oak barrels (Nevers, light toast), where it sat on its lees for two months. It was then given 22 months ageing in cask.

It pairs well with robust fish dishes, charcuterie and peppery cheeses.
