Selected parcels from Episkopi. Over 200 years old, ungrafted.

Vinification & Maturation

In stainless steel vats, at a controlled temperature of 16 – 17°C, lasting almost three weeks, partially uninoculated. Eleven months in stainless steel vats, on fine lees with occasional battonage – three times per week for the first months and with diminishing frequency thereafter.

Harmony

It can be served with grilled fishes, seafood, sushi or vegetables.
