Tasting Characteristics

A colour of ripened corn, this Bourgogne blanc is anything but simple. Distilling a perfume mingling honeysuckle and toasted hazelnut. On the palate it delivers a crunchy roundness and light freshness. One may appreciate it in the first years.

Vineyard

The average age of the vines is 40 years. Soil typical of Burgundy, rich in clay and limestone.

Vinification & Maturation

Alcoholic fermentation lasts 6 weeks. Followed by malolactic fermentation at a controlled temperature of 17 ° C. They are then taken to the cellars for maturation. The duration is  depending on the variety and the year between 8-12 months. Fermentation and maturation take place in oak barrels (10-40% renewed every year). Filtration is preceded by bottling. Ages for at least 5 years, depending on the year of production, in ideal maintenance conditions.

 It is the ideal accompaniment for poultry, fishes, seafood and goat cheeses.
