Tasting Characteristics

It was created by combining the Chardonnay varietal with a small amount of Assyrtiko for a cool freshness. It has a straw-yellow colour with green hues. Its expressive nose exudes aromas of ripe fruit (melon, apricot, pineapple) and notes of lemon, minerals and flowers against an elegant backdrop of vanilla and hazelnut. It has a rich mouth feel, with a creamy texture, expansive taste and good structure.

Vineyard

The estate-owned vineyard that today occupies 57 hectares, 380 metres above sea level, surrounds the winery.

Vinification & Maturation

After pre-fermentation maceration, the Chardonnay is fermented in new oak barrels, where it is left for a few months on the fine lees to round out its rich character and acquire a fat flavour. In contrast, the Assyrtiko is fermented in stainless steel tanks to retain its liveliness, giving the wine a note of freshness.

Harmony

Food pairing oily fish, cream sauce pasta, risotto with white sauces, poultry dishes and mature cheeses.
