Tasting Characteristics

Colour straw blonde with light shades of green, with gentle aromas of fresh-cut fruit, such as pear and apples. Excellent structure with a depth of flavours and an acidity which brings the flavours to the fore and adds freshness, with a delightful aftertaste.

Assyrtiko 50%, Trebbiano 30%, Sauvignon Blanc 20%

Vineyard

The soil is fertile, with mixed composition ranging from sandy loam to clay loam thus offering the possibility of producing wines of exquisite quality and rich aromas. The microclimate of the region is characterised by cold winters and warm summers, while a small river called Permisos contribute to the existence of a mild continental climate. The vineyards are located at an altitude between 450 and 550m and have a slope between 3 and 7%.

Vinification – Maturation

Cold extraction for 12 hours at 8°C in an oxygen-free environment followed by cold fermentation at constant temperature at 18 °C.

Ideal to accompany fresh see-food, grilled fish, salad and vegetable pies.
